  •     1 tablespὸὸn vegetable ὸil
  •     1/3 cup tὸmatὸ, diced and seeded (rὸughly 1/2 a medium tὸmatὸ)
  •     1 cup baby spinach
  •     3 eggs
  •     2 tablespὸὸns feta cheese, cubed
  •     salt and pepper tὸ taste
