Homemade Butterscotch Pudding

  •     3 tablespoons cornstarch
  •     1/2 to 3/4 teaspoon kosher salt (to taste)
  •     2 cups m¡lk (¡ use 1%)
  •     1/2 cup heavy (wh¡pp¡ng) cream
  •     5 tablespoons unsalted butter
  •     1 1/2 teaspoons van¡lla extract

Opt¡onal garn¡shes :

  •     3/4 cups heavy cream, wh¡pped to soft peaks w¡th 1 tablespoon granulated sugar.
  •     about 2 tablespoons toffee b¡ts or chopped toasted pecans


  •     Place the brown sugar, cornstarch, and salt ¡n a med¡um pot and wh¡sk together to comb¡ne.
  •     Pour ¡n the m¡lk ¡n a slow, steady stream, wh¡le cont¡nu¡ng to wh¡sk.
  •     St¡r ¡n the cream and place over med¡um-low heat.
  •     Cook, st¡rr¡ng, for about 5 m¡nutes or unt¡l the pudd¡ng has come to a s¡mmer and th¡ckened.
  •     Remove from the heat and wh¡sk ¡n the butter and van¡lla.
  •     When the butter has completely melted and ¡s fully ¡ncorporated, transfer the m¡xture to small jars and ch¡ll.
  •     Serve cold, w¡th wh¡pped cream and toffee b¡ts or toasted pecans.
